Trans fatty acids, also know as hydrogenated or partial hydrogenated oil, are artery-clogging, cancer causing oils found in about every conceivable canned, packaged, dried, wrapped, preserved and fast foods. Just try doing your grocery shopping without buying foods that don't contain trans-fatty acids. Cookies, crackers, fried foods, donuts, soups, breads, ice cream even baby food! It's virtually impossible. And don't think that you're safe in your health food store. Read the label. Caveat emptor! Buyer beware!

Trans fat will increase the blood levels of low-density lipoprotein in other words your "bad cholesterol" while lowering the levels of your high-density lipoproteins, your "good cholesterol". They have been proven to increase the risk of cancer, diabetes and cardiovascular disease.

Trans fats were introduced about 100 years ago as a means of supporting the processed food industry by helping food stay fresh on the shelf longer. 90% of American families' money is spent on processed food. Trans fats accounts for 4%-7% of the American diet. The food industry succeeded economically but at what cost of human health? The FDA will require listing the amount of trans fat on labels next year. A good start.

Hydrogenated or partially hydrogenated fats are produced artificially by heating liquid vegetable oils in the presence of metal catalysts and hydrogen. This process causes carbon atoms to bond in a straight configuration and remain in a solid state at room temperature. Natural unsaturated fatty acids have carbons that line up in a bent shape and remain liquid at room temperature. Ingesting hydrogenated oils will not only produce disease in the long term, but will interfere with your body's ability to ingest and utilize good fat.

So not only will they kill you, but they will make you fat in the mean time. If you consume lots of saturated fat you will only be getting small quantities of essential fatty acids. Found in food such as nuts, fish, olives and egg yolks. Eating trans fats will make you gain weight because your body will want to consume more fat to get the essential fatty acids it needs. Essential fatty acids are vital to every metabolic function in your body.
